For a generation, Kowloon was the room the city dressed up for. Now it is back on the fifth floor of Delta Plaza: a dim sum kitchen and cocktail lounge through the afternoon and evening, and a club with a serious sound system after ten.

Surabaya remembers the name. We kept the feeling.

The original Kowloon was where the city celebrated: wedding banquets, business dinners that ran past midnight, and dance floors that didn't empty until the lights came on. When it closed, people kept asking when it would come back.

The new Kowloon borrows its spirit from Hong Kong after dark: neon on wet streets, steam from bamboo baskets, a bar you could lose an evening in. Cantonese cooking done properly, cocktails built around tea and baijiu, and a room that changes character as the night goes on.

Trained in Mong Kok tea houses and later at hotel kitchens in Hong Kong and Singapore, Chef Leung leads a team of 22 and a dim sum station that folds everything by hand each morning.
